The Olives

Convivium is an Italian Extra Virgin Olive Oil, obtained by cold pressing the Dolce Agogia variety (unique to Umbria) with Leccino, Maraiolo and Frontoio varieties. It is the only place in the world where we can assemble this blend of olives. Thanks to the unique climatic, geographical, and geological conditions surrounding Lago Trasimeno.

The name of Dolce Agogia, which reminds the term “sweet drop” in Italian, tells us a lot about her characteristics. It ripens early, loses its bitterness before the other varieties; so much that it is the only variety of olive in Umbria that is also consumed directly from the tree, in its whole. It can resist the cold weather and to the Pseudomonas bacteria more than any other type of variety.

Dolce Agogia represents, together with other cultivars of the region, a great genetic heritage acclimatized by thousands of years of local exploitation. A heritage that must be kept and protected.

To bring all the flavours of this cultivar to your table, we harvest with the latest technological solutions. This method makes it possible to harvest them quickly and to transport them to the mill just as quickly. From harvesting to cold-pressing, it’s less than 24 hours that elapses. This prevents oxidation of the olives and allows premium quality, preserving its freshness longer while maintaining the number of phenolic substances originally present in the oil.
